VINIFICATION
Natural grape-drying process in the historic building. Vinification starting from December. Cold maceration for some days. Low temperature long fermentation, with daily remontage and delestage processes. Ageing for 36 months into new French barriques and amphorae.
AGEING
36 months in bottle. Closure with natural cork.
TASTING
Colour Deep ruby red, with bright luminosity and vivid chromatic intensity. Bouquet raisins, dried figs, and a hint of malt. Aromas of dark chocolate and dried small fruit. Spicy nuances of black pepper and a subtle touch of rumtopf. On the palate well-integrated tannins; clear acidity that supports the fruit and adds vibrancy. Long and persistent finish.
Alcohol: 16,5 %.
Total acidity: 6,2 g/l.
Residual sugar: 1,3 g/l.
